I have been in the trade so let me offer some thoughts, I want this great new place to thrive!Really happy to have a new and distinctive restaurant in Clarkson-Lewiston, long a food desert. Sinaloa has some authentic flavor profiles and not just yet another dreary rendition of gringoized 'Mexican' food. The Camarones Sinaloa and equivalent mixed seafood, grilled steak, etc. are excellent and must trys. The kitchen is spot on, the food suffering only from the endless trap of a huge puddle of re-fried beans, yellow rice, and handful of lettuce that every Mexican restaurant in the US feels compelled to dump on your plate. Honestly, some re-fried black beans with a spicy white queso crumble, or veggie 'ceviche' tower would be the perfect complement to a dish like the Camarones, take the dish to another level, and still keep the Top price less than $20... please, leave the usual rice/beans/lettuce nonsense to the gringo dishes.Now, front-house issues. 1. The noise is unreal. The raw ceiling with center gable just bounces it back into the room. You can't have a conversation across the table when the place is full. Ceiling baffles/black noise foam/hangings are a must to settle and diffuse the racket. 2. Seating management is a disaster, staff putting you where ever with no hand-off to a responsible server, second time there we sat for 20 minutes without even water and a drink order because we got lost in the process, first time not much better. Have to have a machine like process for assigning seating and prompt server follow up.3. Serve times are off. Appetizers are never to be served with the entree, and appetizers hit the table in 12 minutes or less. Entree 20 minutes max at peak times, less is better. Sinaloa is VERY busy at peak times and as experience is gained this should improve IF Leadership stays on top of the process. 4. The tables next to the doors, specifically the seats with backs to the doorways are a catastrophe, with customers constantly bumping into into you as the come and go and standing over you in the doorway. Specifically the table at the 'main entrance' door that opens onto Diagonal street needs to go and be replaced by a hostess station. There is room for the table to be moved elsewhere and this will improve intake and customer experience. I will refuse to be seated at this table in the future and will go elsewhere if that's the only option - and you should too.Great start, fine tune the issues and this place is going to be a money making winner for all involved. I'll be back, and soon!

This is NOT high-end mexican cuisine. It's more on par with Taco Bell. And that's OK. The food is tasty, prepared quickly, and at a very fair price. The location is very convenient to my apartment, and that's a plus as well.

The grandkids wanted to go to Taco Bell for lunch so we went. They were very busy but service was fast. I had the steak salad and it was very good. The shell was layered with white rice and the salad and meat on top. Very good for fast food.

The food was average at best and the service was almost non existent. Initially being seated I was given a small basket of chips and salsa. The salsa was very good. It took a long time after ordering to get my meal. When the meal came I had eaten the chips and was asked if I would like more. That was the last time I saw the server. When I left and walked up to pay for my meal I found him sitting in the corner playing with his phone. It worked in a pinch but not a place I would return.

Wife ordered ground beef taco and tostado, with beans and rice. I ordered ground beef taco and enchilada with beans and rice. Everything was very good, had lots of flavor.Chips and salsa had lots of seasoning including slightly hot.Service was good and prices were reasonable

I travel for work which brings me to Lewiston at least once a month and I always eat here for dinner. It is a family owned and operated restaurant with friendly staff and amazing food! Everything on the menu is good and you get large portions so you never leave hungry. I just wish I could eat here more often
