I grew up eating North American elk and deer. You come to understand that when dealing with wild game, whether venison, boar or rabbit, there is a certain level of required know-how and elegance involved in the preparation to elevate it from good to great. I have eaten likely hundreds of cuts of wild meat in my from many places, and I can say with certainty that this restaurant ranks among the best of any. The burger I ate was perfectly cook to medium; no small feat when dealing with wild game. The flavors were otherworldly; a perfect mixture of melted gooey Camembert and fresh rosemary. This was not just eating, it was indulgence. Excellent ingredients in the hands of people who obviously know their craft and care a great deal. On top the sheer quality of the food, there were the owners and staff. Each one of them was a friendly delight to share the room with, happily and quickly helping us with every question and request. We sat and talked for some time and I genuinely enjoyed hearing the story of the restaurant. I would (and will) come back to this restaurant as often as I'm in this area, as it was a pure pleasure in every way from the food to the staff to the ambiance.
