Helmed by Sam Leong, the award winning celebrity chef, Forest is a Cantonese-fusion restaurant that serves a plethora of creations that combines the old world wok-style cooking with the new world creativity.Having dined here several times in the past and since its inception, it was sort of home-coming for me to connect with Sam Leong's creativity.Located at the West end of RWS, parking is conveniently located at the Equarius Hotel. The wood coloured interior decor replicates the feeling of being in a wooded area of a forest and the open kitchen & high ceiling evokes a completely open spaced dining experience. In its effort to attract more lunch traffic, their 3 course Executive set lunch is pretty much value for money and wallet friendly too. I was here for lunch but wanted the 8-course dinner with wine pairings menu and the maitre d' was very obliging in setting me up for that.First off was a nice glass of sauvignon blanc from Misty Bay NZ. By the end of the course, we would've down 2 whites and 2 reds, and I must say the selection of the wines were excellent pairing with the food being served.I must say the entire dining experience was very well curated and gustatory, taking you from the mellow savoury to balsamic fiery and switching to mouthwatering savoury to succulent ambrosia.While the salt baked braised abalone was flavorsome, the black truffle was completely lost in this dish as its nutty and earthy aroma was not present and its taste bland by the heat of the baking.I particularly like the braised beef shank was it was so succulent and tender. A very good experience indeed. Went here to celebrate our friends birthday after we went to Universal Studio. We were welcome and assisted by Chester. He even recommend us what food to order since its our first time in this restaurant. I ordered Rib eye and it was superb and perfectly cooked. Very tender and the quality is very good. Came here several times with family and friends for their set lunch promotions. Contrary to what one might expect, the restaurant is not vegetarian, nor does it cater to health fanatics (although the food does look healthy). Each four-course set included hot starter, cold starter, main, and dessert and came with freshly baked in-house bread. My wife and I sat through the 8 course culinary adventure with Chef Stephen.Chef Stephen from Austria is a very friendly chef, he came by our table a few times both to introduce the dishes and ingredients as well as to check on the food quality.The high tables and chairs were not comfortable but that was more than compensated by the high quality of food.From the first course, it was evident Chef Syephen doesnt like any one flavour to overwhelm our taste buds. For eg, foie gras usually leaves a big overwhelming aftertaste but his dish coupled woth citrusy flavours so we didnt felt overwhelmed. The halibut fish was slow cooked to perfection but topped with crunchy bits.The iberico pork cheek was soft amd so....ooo good. Even the strawberry sorbet ice cream (normally would make adults cringe at the sourness) was nicely encased in a white choc magnum case. So ot was very very well balanced.We are true food conneiseurs and hv been blessed to hv always eaten at some of tge best places in the world.Here for $150, we get a very enjoyable dinner that was more than his one michellin star. Chef Stephen's delicate balancing act is almost Japanese-like.Highly recommend.The other chefs and staff were also responsive and professional.
