It lies south of the cities of Holladay and Murray, east of Midvale, and north of Sandy within the Salt Lake City, Utah Metropolitan Statistical Area. Following a successful incorporation referendum in May 2004, the city was incorporated on January 14, 2005. Cottonwood Heights had been a Census-designated place (CDP) before incorporation. The population as of the 2010 census was 33,433. This is a significant increase over the CDP's 2000 census count of 27,569.

Not the best Mexican food in the valley, but a very good neighborhood choice that has been here as long as I can remember. I haven't been here is quite a while and decided to stop in tonight. I had the Chicken Quesadilla from the Appetizer menu and brought half of it home with me. I really like their Salsa. The chips are very thick, almost too thick for me. The first serving of chips and salsa is complimentary, but they charge for refills. I saved room for their Flan that is also very good and a little different than typical Flan. It is served as a slice and has a consistency almost like cheese cake. Service was quick and very attentive making for a pleasant end to the day.

Cafe Rio have gone downhill in the last few years but my last visit really was a disappointment. The staff seem total incompetent and not trained, I had to tell my server what goes with the quesadilla.Then the guacamole was old and brown, and they tried to give me a bit but I refused. There was also food waste all over the preparation areas and garbage all over the floor. This is a total health hazard!

We went with another couple on Friday close to 7:00. We waited about fifteen minutes for a table. Our waiter was very pleasant and accommodating when one in our group asked for the hottest salsa to go with the chips. My husband wasn't excited about going as he had been years ago and just thought it was so-so. He ordered the LM Combo and really liked it. He said he could blow bubbles with the amount of cheese on the enchiladas. I think that was a compliment. He has wanted to go back every day since then. I had the Laura Soecial and thought it was good too. I see another trip there in our future.

We ordered by phone and used the curbside pickup which worked well. I ordered the mango salsa chicken...it was so amazing! Tender grilled chicken breast topped with a tasty not to spicy mango salsa served with cooked perfectly asparagus, mashed potatoes and a spring mix salad with a lovely ranch type dressing. My husband had the baby back ribs with a salad and fries, my son got chicken tenders and fries. Everyone happy!
