The Town of Erie is a Statutory Town in Boulder and Weld counties in the U.S. state of Colorado. The population as of the 2010 census was 18,135, up from 6,291 at the 2000 census. Erie is located just west of Interstate 25, with easy access to Interstate 70, Denver International Airport and Colorado's entire Front Range. Erie's Planning Area spans 48 square miles (120 km), extending from the north side of State Highway 52 south to State Highway 7, and between US 287 on the west and Interstate 25 to the east. Erie is approximately 35 minutes from Denver International Airport, 25 minutes from Denver and 20 minutes from Boulder.

I loved Subway. It was a lot better than quiznos. When I walked in a bell rang and BOOM! Out came a worker. They have a wonderful selection of chips and things to put on your sub. If I were to recommend something, it would be a footlong with black forest ham. It makes my mouth water when I hear about it. Great place to eat!

In the mood for Pho, so I stopped at Pho Cafe to find out if they offered take out. Lucky me, they do. FWIW, this was a Friday and they were fairly busy.The menu is a mix of Vietnamese and Chinese selections, plus Pho. I ordered a medium Pho Ga. What I got was a takeout container of broth, maybe between 24 and 32 ounces, and a takeout foam box of other ingredients which included sliced chicken (very tender), rice noodles, bean sprouts, jalapenos, onion, basil leaves and possibly mint leaves, and a 4 oz container of hoisin and spicy red sauce.For one person this is a big portion. I poured half the broth in a large bowl at home and put in about half of the other ingredients. Wow, this is good stuff. Refrigerated the leftovers and had them for lunch the next day. The broth maybe could have been richer, but overall I was quite pleased.

Food is consistently good, and a trip here is more than just a luncheon stop. Cute shopping with gifts from France, Italy, etc. and a refrigerated cheese shop, where you can browse and sample latest offerings.
