The Town of Carbondale is a Home Rule Municipality in Garfield County, Colorado, United States. The town population was 6427 at the 2010 United States Census. The town is located in the Roaring Fork Valley, downstream from Aspen and upstream from the mouth of the Roaring Fork River at Glenwood Springs. The town proper sits on the south bank of the river, at the confluence of the Crystal River. Carbondale's horizon is dominated by the 12,953 ft (3,952 m) tall Mount Sopris several miles to the south of town.

I often go to Garcia's as a welcome change from the "regular" restaurant offerings of the Roaring Fork Valley. Garcia's is conveniently located right of Highway 82, right hand side of the street, just after the diner.If it looks like a Mexican Grocery Storefront, it is because that is what it is. The food served in the front part is freshly made to order, great ingredients, authentic and genuine preparation.On Saturday and Sunday, Menudo is served and most of the tables have at least one serving. It is tasty.The tacos are genuine and tasty. Just a freshly made tortilla packed with you selection. They aren't served with loads of lettuce and filler to cover up a lack of beef, chicken or your choice. These are abundant. Try the saudero/brisket. Carnes asados, chicken/pollo, and other options were all delicious.Lots of Spanish spoken. English too. The entry and outward appearance aren't the most inviting. Go inside, enjoy the meals, the pleasant staff, and experience.

Los Cabos now occupies the space where El Horizonte was. The restaurant is a significant improvement although little has been done to upgrade the interior; the pool table and unused bar should go. Nevertheless, the cuisine is more than decent. We have been there several times and the food, served on rather oversized plates, has been uniformly good. I can definitely recommend the carnitas and the carne asada. I can also highly recommend their soups (not menudo), especially the birria.

We travel to the Carbondale area fairly often but had never had occasion to try out Los Cazadores (The Hunters in English). We didn't even know it was there! It is located just off Highway 82 at the El Jebel turn off. We stopped in for lunch and I had some of the best posole ( It means "hominy", and is a traditional soup or stew from Mexico. It is made from hominy with meat (typically pork), and can be seasoned and garnished with chili peppers, onion, garlic, radishes, avocado, cabbage, salsa and limes and/or lemons) I've ever had. Most Mexican restaurants to not have posole so it was a real treat. The rest of the food, chips and salsa were also quite fresh and good. We would highly recommend giving this family owned establishment a try for lunch or dinner.

Lots of Mexican choices, but outside of the traditional burritos, tacos, and enchiladas, the specialties were a very mixed bag. The ceviche was very good, but the mole was barely tolerable, certainly not traditional, completely devoid of any peanut taste, and not much of a chocolate taste either, using spices to cover up the basically bland taste of the sauce. Locals seem to like the place, though, so I guess most customers stick to the traditional items, and you probably should too.

I recently had dinner at Mi Casita with friends. On the menu was something so unique, Lingua Tacos. These are beef tongue which has been slow cooked and topped with cilantro onions and lime. The tongue was so tender and delicious. I have been raised in Southern California and have had Mexican food all over, but never beef tongue. Highly recommend it.
