Chef Danny St-Pierre built this restaurant’s reputation, left in 2015, was replaced by Olivier St-Arnaud, who left 2 years later for Mont-Tremblant. Although I had never tried this restaurant before, I was curious to see how the restaurant fares under leadership of new chef Julien Hamont (Marc-André Roy was the chef at lunch though).Before we start, and to be fair to the restaurant, my visit took place at lunch, during the Sherbrooke @ table promo week.Prompt and dynamic hostess, the welcome was very pleasant and set the table for the rest: I arrived around 13:00, so just after peak lunch rush which, because of the promo, was exceptionally busy. Still, all personnel encountered were smiling and courteous, they don’t let you see them sweat, probably one the most professional service staff in Sherbrooke.The appetizer was a salade de courges: not bad, good flavours in there, the dish’s flavours were diminished by the cold of the fridge it was stored in. They prepare in advance to speed up service (I don’t mind) to the detriment of the food as the flavours would have come through better had it been at room temperature for a while. Still, taste was there.Followed up by the tuna tataki, quinoa & kale, an all-star dish for both flavour and nutrition (hard to beat this combo nutrition wise). Again, tuna was a little harder than I expected because it goes from very cold to very hot in the kitchen process, this tends to harden the fish. Both the quinoa and the kale were well seasoned and I thoroughly enjoyed this dish. Texture wise, it would have been more interesting IMHO to toast the kale and oppose the crispiness to the quinoa & tuna’s mushiness. But again, taste all over this dish.Finished with a very pleasant chou a la creme, beautiful rendition, nothing stupid, plainly good.For $40 (no wine included), this was exceptional value on a very busy day and consequently merits a five star rating for service, ambiance & taste. Will visit again.

L'Empreinte - cuisine soignee

When I read "Cuisine soignée", to me, this means that I should be pretty happy when I leave there. Didn't quite happen.We went on a Saturday night. Music was very loud, and lights are super bright. Not very intimate. The menu offered was not at all the same as the one on the website. The waiter explained that they change their menu every 6 weeks. Choices are quite organic.....and even includes bugs. Yes, bugs, as in crickets. Most of the wine choices are also organic. I had ceviche, and my boyfriend had scallops.....the portions were quite small (small enough to be entrées, especially the scallops). The food appeared to be fresh.....but 4 days later, I'm still on meds to control the indigestion following that supper. The dessert, which included steaming marshmallows, tasted like Lucky Charms cereals. Needless to say, we won't be going back. Were my expectations too high ? Perhaps. In my humble opinion, the prices are too high for the meals offered. Perhaps I am too conservative ;-)

Great big place, but with loads of character and feels cosy and private. Great cocktail list and friendly / attentive service. Servings were pretty large - I didn't really need a starter AND a main. Loved the range of tartare options - nice light flavours.
