It is fated that we are not as keen to constantly reduce the net cost of the meals we offer as professional restaurateurs are. Having the favor of alternative business, we thought that we can afford to refuse from monkey restaurant business and try to play on a different field. We have focused on maximally ecological food and instead refused from a handful of culinary tricks such as “liquid smoke”, disputable preservation technologies, “reviving” escargots with special salt solution… etcetera, etcetera.We are proud to say that we simply refuse to have any other water except self-filtered through our own professional filter unit. Coming back from Italy to Ukraine, we were seldom satisfied with local restaurants, for it is never pleasant to overpay for vines that cost times less in a store nearby. For this reason the level of extra charge for vines at Fratelli is agreeable for your eyes and your wallet. We also think it normal to carry in a bottle of your favorite wine (of course, if it is missing from Fratelli wine collection) and enjoy it with a company of your pals, having paid just a modest “cork fee” for the pleasure. In our opinion, at a restaurant it is fair to make profit mainly on what you cook and serve, not on re-selling. We do not believe in restaurants that entertain and serve food at the same time. This is why we don't have plasma screens, we don’t offer show-programs, and our music never contradicts your stomach. Our goal is to rise the gastronomic level of Odessa, developing the restaurant devoted to nothing but food. The truth lies in our plate!And about the food: we are completely sure that only a person having absorbed the national cousine’s essence since childhood shall be able to penetrate the tastes, scents and textures of the good product. That is why we have an Italian at our kitchen.Indeed, genuine Italian food lives in Italy. But we try our best to give it a place to live in Odessa. We have created a project for us and for people sharing our spirit, a place where we eat and spend time. Here we do not save on groceries or compromise on quality – we do buy the best. If something is not claimed, it is definitely dispensed PRIOR expiry date. Of course, our project is not a charity one, but ecological compatibility and our good name for us are much more important than the payback period.
