It encompasses nine prefectures (ken): Aichi, Fukui, Gifu, Ishikawa, Nagano, Niigata, Shizuoka, Toyama, and Yamanashi.

I love whisky distilleries and this one did not disappoint (except for one thing, to be mentioned below). The location was breathtaking, in the Japanese Southern Alps, and the tour was fantastic. There's a museum of whisky, and a restaurant on site. It culminated with a great tasting. The production capacity appeared very high, and there's a lot of barrels aging. Unfortunately there was no ability to buy a bottle of the whisky made on site. That was my only disappointment. The bar in the visitor's center was really special. They were pouring some incredible whisky for really good prices. This is a must-see day-trip from Tokyo.

Though this tour is in Japanese, there is an English audio guide and information booklet. Our guide, Kobayashi-San was also excellent, she was very accommodating of the fact that we didn't speak any Japanese, extremely patient, and so friendly! This is a large distillery, so it's fascinating to see inside the production and bottling facilities. The whole tour lasted about 45 minutes, followed by a tasting session. The gift shop also has some great items, including unique glasses.
As a brewing enterprise, Senjyo pays particular attention to rice. Ina farmers are contracted to grow the Miyama Nishiki and Hitogokochi varieties of sake rice developed in Nagano Prefecture and, after harvest, we polish the rice in our own mill. We are also developing a brand of jummai sake that uses only Hitogokochi rice grown at high elevation.
