It was developing into an industrial and trading power when German bombers destroyed the city center and harbor in 1940. Old Dutch-style houses can still be found in historic Delfshaven, from where the pilgrims set sail in 1620. Cultural offerings from summer's carnival to classical music give Amsterdam competition.

What can you say; you need to book weeks, or even months in advance. It's so popular because it's so special. Chef Yamamoto combines traditional Japanese cuisine with local dutch ingredients. He investigates and researches the best of both worlds. Not always with outstanding results but always an exciting experience. And then you can get a sake, directly imported from Japan, to match most every dish. The only downside, you can't get in on a spur of the moment..
