Our Salon offers an enjoyable cooking class in English for the visitors from abroad in Kanazawa machiya (historical town house). As we focus on kouji and its products, you can learn about the secrets of healthy Japanese cooking as well as having a fun lunch with locally produced alcohol/soft drinks.

Moe and Chicako shared FAR more than their kind and patient (my husband and I are inexperienced cooks) instruction in the making of three tasty dishes. Their beautiful generosity extended to a fascinating tour of the building project using traditional construction methods underway at the salon, the MOST delicious homemade plum wine (as delectable as a perfectly ripe piece of fruit), an unscheduled nap (one of us ran out of steam), insights into Kanzawa history + Japanese culture, and the making of a difficult-to-obtain dinner reservation for our family of 8 for that same evening. We definitely hope to return and in the meantime will most highly recommend to friends. The cooking salon was a highlight of our 2+week holiday and can't thank Moe and Chicako enough!!!! Dainichi-zakari Sake Museum Our ancestors started brewing sake in 1760. So this year is our 258th anniversary. The present owner is part of 10 generations of sake brewing. Our sake is a traditional part of Japanese culture. Every day we take pride in making sake in the same traditional way that we started 255 years ago since our company’s formation. We are descendants of our ancestor Heike samurai, so that our sake is the same sake recipe that the samurai created. The present tenth generation also has never forgotten the samurai spirit. We will strictly stick to water and rice to make sake. The sake brewed by a skilled brewer, ”Ryouhei Mae” who won’t compromise can be called genuine sake. Therefore, the only sake that encompasses the history of the Hashimoto family is “Junmai Daiginjyo Judaime.”

Sougen Sake Brewery

Sogen sake Brewery was founded in the mid-Edo Period, 1768. Legend says Sogen Chugoro who traced his roots to Yoshiharu Hatakeyama, the lord of Nanao-jo Castle in the Sengoku Period, started business and his descendant was trained in a brewery in Itami and mastered the secrets of fine sake brewing. Since then, we have carried on the tradition and have been brewing sake to please our customers for over 240 years. Our motto is "Our customers keep coming back to us."
