Nougat Diane de Poytiers

Discover the Nougat Diane de Poytiers is 3 generations of a nougatier artisan story in Montélimar. To make nougat, we cook honey and glucose in a copper cauldron in a bain-marie. In another copper skillet, the sugar is browned according to the desired temperature. So we will get a soft or hard nougat. Egg whites are mounted in snow and then incorporated with honey. It is these which will give the dough its lightness as well as its color. Hot sugar is added to the mixture as well as roasted almonds. Pistachios and vanilla complete the production. In the morning we make and cut the nougat and the afternoon is reserved for packaging in its different forms.
