State of Bahia, Brazil Food Guide: 10 Brazilian food Must-Eat Restaurants & Street Food Stalls in Salvador

May 31, 2020 Sachiko Swiger

Reviews on Brazilian food in Salvador, State of Bahia, Brazil. Brazil's former capital is renowned for its African-influenced cuisine, music and architecture. Known as "the Capital of Joy," because of its exuberant week-long Carnaval celebrations, Salvador brims with contemporary music and art amid architecture that has gone untouched since the 17th century.

Pelourinho is a must see place in the heart of Salvador. Like any other tourist place, it will have several options of Restaurants. Some good, some really bad, some that are just tourist traps. So if you are from out of town, it is hard to know which one. Well, SENAC restaurant is a place you can go where you will have a good taste of several local dishes, done in a way to please the outsider, (hence, more international, with less of the strong flavours of Bahian food), served nicely by students who are in a restaurant school, with a fair price. It is not the best bahian food you will ever taste, but it is probably the best choice in pelourinho if you do not have yet your choice made. Not to mention that, it is a school, so it is nice to be contributing to the art of good food and good service.

I am a committed meat eater and I would never have expected to find myself in an experimental vegetarian restaurant but the other reviews on this site piqued my interest and we visited the restaurant last night.First, I think it is important to be prepared for the fact that this is a very small restaurant, just two tables. The two proprietors are very committed to their philosophy and are keen that you understand the concept of the restaurant and their food - but not the detail. They want you to experience the food rather than analyse it, so ditch any thoughts of asking what particular things are or, perish the thought, asking for the recipe.I found the experience thought provoking and comical all at once. It was good to be forced to slow down and consider what you are eating. Coat palate with wine, just so much no more, then take a mouthful of this topping on that substrate and then another carefully judged sip of wine and then the next selected mouthful and so on. That was the thought provoking bit. But i also wanted to giggle because it felt as if chef would not leave you on your own until he was sure you had got the hang of the sequence. I was naughty at school and was tempted to be naughty here too but didn't dare! The food was indeed well thought through and some of the flavours astonishing. The depth of flavour that he achieved with manioc pasta, herb infused cachaca and other things he wouldn't tell us about, but without salt or oil, was just amazing. Even the idea of manioc pasta was amazing. It had a great mouth feel and was beautifully al dente. The fruit dessert that ended the meal was inventive and well worth the effort that Gabi put into it. It wasn't a cheap meal but the thought, skill and attention that go into preparing and serving a meal such as this mean it was well worth it for the experience. Thank you very much!!! We appreciate your description. It was a pleasure to serve them :) Gabi, Chef Ramon Simões and cats

We selected this restaurant based on the evaluations on the TripAdvisor and because the Chef put his name on the restaurant. The first impression was positive, friendly staff, nice decor, interesting menu, and good wine list. The problem started when ou orders arrived. My ossobuco was so hard that I could not cut the meat, and my wife's fish was only half cooked. Because half of the fish was very good and the complements were nice, she decided to eat the good part of the fish. Because I could not eat my ossobuco, the restaurant staff offered to replace the dish. I ordered a steak. What a surprise. My knife could almost not cut the steak. Because my wife had in the meantime eaten her half fish, I decided to give up on ordering an edible dish, and we ordered a chocolate mousse for desert that was excellent. When I had to return the second meat dish, I asked to speak with the chef that put his name on the restaurant. I was told that he had left when we arrived and that a sub-chef was in his place. This obviusly does not excuse the horrible cooking, but may explain our bad experience. So if you what to try the restaurant, I revomend checking if the chef is supervising the kitchen.Good evening Mr. Ronald,It was an incredible pleasure to welcome you to our restaurant. Even more to know that you liked our house and our service. We work hard and with great love so that all details are important to our customers. We are very sorry for what happened with the facts mentioned. We've tried a contact for a few times with the phone number you provided us with no success. It really is not our standard and so we seek immediate solutions, thus making our customers have the best impression possible of the restaurant. We thank you immensely for your feedback and look forward to the necessary information for you to arrange.Once again our sincere apologies and certain that we will take great pleasure in welcoming you and serving with the standard Du Chef to be.King Regards,Lucius Gaudenzi

Pelourinho, Terreiro de Jesus e Terreiro de S. Francisco are, in my opinion, the most interesting touristic sites in Salvador, aside from the trivial interests of sun tanners and beach lovers. The place has the Cathedral, the Church S Pedro dos Clerigos, the Curch od S Francis, the Church of the Order Tereceira SF, the Church of S Domingos, The Museum of Carnival, the Church of Rosário dos Pretos, the Museum of Misericordia, plus shops, live music, theatrical animation. Cuco Bistro is probably the best choice for a visitor wishing a reasonable meal with local gastronomic flavor in a nice setting. Food is tasty, staff is friendly, prices are not too high, though in Salvador restaurants being wverywhere overpriced. Dear Mr. / Mrs.Thank you for sharing a loverly review about our restaurant and it’s setting in the middle of this wonderful historical center of Salvador. We hope to have you back very soon, it will be a pleasure for us. Best regards, Cuco Bistrô Team

Restaurante Origem

We are foodies living in London one native to Salvador and a German. Origem struck a chord with us because it aims to bring European style cuisine to a city previously lacking in this type of service, while showing locals and foreigners alike that local fare can be used to produce inventive, original and tasty dishes as would be expected in high-end cuisine worldwide. Importantly –while the only food option is a 14 dish tasting menu, wine pairings are available and the service is pleasantly formal, you don’t need to be in a suit or in heels to go to this place. Jeans are perfectly fine. We had the menu with the wine pairing as well as caja and jaboticaba caipiroskas (local fruit crushed with ice and vodka). The food was exceptionally good, in particular the paozinho (typical bread served at kids birthdays in Salvador) and crispy cows tongue burger, which we cheekly asked for an extra portion of. I could describe all 14 dishes at length but part of the fun is being surprised at the use of ingredients, to include cashew fruit coulis over raw tuna, plaintain chips with smoked pork, shrimp with palm heart pasta, guava butter, beetroot cured tilapia – the list goes on and on with bottomless creativity. We would not necessarily recommend the wine pairing unless, like us, you are interested in trying Brazilian wines. They are beautifully paired with the food but in all honesty, Brazil still has a while to go in comparison to other south American countries when it comes to wine and if you are used to the more elaborate new world stuff you will be a bit disappointed. Finally, what also makes this place very very special is the never before seen quality of service compared to usual local standards. The waiters, chefs and other staff were well trained in the nuances of what would be expected at a high- end restaurant serving a degustation menu. You caught their eye and they were right there with you even though the restaurant was very very busy. Even though most of the staff do not speak other languages and the menu is not presented in English, the minute they realized that one of us did not speak Portuguese, they brought out the lovely Barbara (a chef I believe), to explain our dishes to us with a big smile in perfect English. A truly lovely experience, which I would highly recommend. Book in advance as the place is smallish and fills up quickly. We managed to sneak in using their wait list. If you get on it, they guarantee you a table, but only after 10pm on a first come first serve basis!

The food is good here at Coco Bamboo! They specialize in seafood and the menu is enormous with several seafood and fish dishes available. The service and waitstaff are very good and very attentive. The only drawback was the live music. On the evening we were there, the bass had not been set correctly and there was a great amount of feedback during the performance. It made it hard to have conversations and you could not hear the singer at all. Maybe they should think about piped in music!

The view is majestic, the whole bay is there for full enjoyment, which makes any meal way more pleasant! The restaurant is specialised on seafood but meat-eaters do find good options as well; portions could perhaps be more generous, especially due to the high price charged! The place is often full with snobbish "soteropolitanos" (locals), not that pleasant. Other than that, a very good choice!
