January 1 is the Spring Festival on the lunar calendar. A native of Fuzhou must personally make "glutinous rice cake of brown sugar" which is a tradition of Fuzhou passed down through generations. Firstly, cook the sticky rice; put it in a stone mortar and keep tamping it with a big wooden bar until the stick rice is smashed into pastes; and finally produce rice balls, throw the rice balls into brown sugar water and mix evenly. "Glutinous rice cake of brown sugar" (Ci Ba) has the same pronunciation as "happiness" in local dialect and it thus signifies "happiness, sweetness and prosperity" in the new year.
