I typically visit Taiwan every November and while in Taiwan, I enjoy joining the cooking classes here to learn how to make the food I love by myself. This year, 2020, I could not travel due to the pandemic. Taiwan has been doing very well during the pandemic in controlling the spread. My concern is more of getting on the plane etc. As my craving for Taiwanese food continued, I checked the website online and was ecstatic to find out that I can join a virtual class, horay! I got in touch with Chelsea (lovely lady, professional and sweet) and made a few requests. She was very accommodating due to my situation. I immediately booked two classes: the scallion pancakes and the potsticker classes. They sent instructions in advance. The instructions were easy to understand and I was able to get everything prepared. Diana was my instructor for both classes. She was beyond words!!!! In my first pancake making class, I messed up the dough. I showed her my failed dough in front of the camera and she immediately made the suggestion to do it over. I was concerned about her time and she patiently waited for me to start the dough again and watched me step by step. It is wonderful because what I was worried about attending a virtual class did not realize: I loved the in-person class because when you mess up you know the instructor will come to the rescue. I did not expect this to happen in a virtual class, but it did. Thank you Diana for ensuring that the scallion pancakes I made were delicious! Oh, the potstickers were amazing too. These two dishes now have been collected under my repertoire for party surprises! Yes, serving potstickers and scallion pancakes is not big deal to a party but if you show it off by making it right there, it definitely will draw a crowd. Oh! BTW, for potstickers they also teach you the secrets of making the beautiful fried dough flakes!!! My friends saw the pictures I took and immediately grilled me for the secrets!

The MRT is very efficient and excellent to use. The easiest way is to purchase an Easy card and you can check you balance or add value at any station via the machines where you can select English or else go to a booth where the staff can assist, All stations have the train line and stations and maps of the exits and attractions in Chinese and English. The trains are on time and the platforms have the stations listed for that linel in Chinese and English. On board all carriages are clean and spotless and the stations are announced in Chinese and English. So easy to travel around Taipei.

The Martyrs' Shine commemorates at those soldiers who died in China's revolutionary wars in the 20th century. The Shrine is a fine structure, but the main attraction is the changing of the guard, every hour. This precision drill maneuver is a "must see" for visitors to Taipei.

The Taiwanese are generally very well mannered, and the service in the whole shopping centre was no different. Has a plethora or stores and places to eat. The Ferris wheel helps too, but a good place to chill in the day and when dusk hits, you can make your way to the Shilin night market.

The idea of a farmers' market, where producers sell direct to the public, is relatively new in Taipei, but it is catching on. There's lots of things to do and buy at the Expo weekend market. The honey is a bit pricey, but it's a natural product of Taiwan. The fruit comes in many varieties, some of which will seem a tad strange to newcomers to the island. What would a Taiwan market be without food? There's lots to eat. Youngsters will like the bouncy castle. The Expo weekend market has something for every family. It's at the Yuanshan MRT Station on the Red (Tamshui-Xinyi) Line.

Taiwan Beer is made at the Taipei Brewery of malted barley, hops, yeast and water -- and home-gown ponlai rice. The ponlai rice gives Taiwan beer its unique flavor. Taiwan Beer will take a good chill, essential in a warm climate. The beer has a healthy head and is a rich golden amber in hue. Taiwan Beer comes in two varieties -- Classic, the original recipe, and Gold Medal. Taiwan Beer has won a number of international trophies. The Gold Medal is known as "Jin Pai." By the way, about 80 percent of beer sold in Taiwan is Taiwan Beer. There was a craze for mainland Chinese beer for a while, but it soon blew itself out.
