Talamanca Chocolate

Make your own chocolate in this fun, informative hands on workshop. Starting with the cacao tree, you’ll learn the history, culture and traditional uses of this amazing tree. Then it’s back to the kitchen to make chocolate from a 2,000 year old recipe. Participate in every step of the process, from roasting, grinding, winnowing and milling. From the fresh fruit to wrapping your own finished bar!

I had a lovely time in the Talamanca Chocolate workshop. Ancel, the owner, is delightful and a fountain of chocolate knowledge (pun intended). Ancel will walk you through the bean to bar experience starting with her beautiful cacao orchard. You will learn how to roast, winnow(remove shells) and grind cacao beans all the while tasting the many varieties of delicious Talamanca chocolate. Spending time with Ancel and eating Talamanca chocolate was the highlight of my Puerto Viejo trip.

Rescate Wildlife Rescue Center

Rescate Wildlife Rescue Center (formerly Rescate Animal Zoo Ave) is a non-profit that has been rescuing wildlife for over 30 years. While educating the public about local wildlife, this rescue center and sanctuary also breeds endangered species for release to the wild. They have reintroduced several different species to previously extinct areas of Costa Rica and their current Scarlet Macaw breeding program plans to reintroduce a further 500 of the species by 2030. Every admission fee to the sanctuary goes to supporting their cause.

The center is 15 minutes from the airport, and it was an excellent place to spend a few hours before our flight. We enjoyed spotting the sloths, and seeing the peacocks and lizard which roam freely throughout the paths. Eating early at the cafe was a good call, since a bus tour arrived that Saturday and filled up the restaurant just as we finished.

I stayed for two weeks with my boyfriend and we learnt so much in the experience that I would definitely recommend it to anyone who wants improve their Spanish, immerse themselves in Costa Rican culture, learn about sustainable living or just generally would enjoy a farm experience. I was very nervous before however as soon as we met Donald he made us feel incredibly welcome. Him and his wife Xinia are such lovely and happy people. There were only a few volunteers on the farm when we stayed which made it a very intimate experience and meant you could really get to know each other. Xinia’s food is incredible!! And she is so accommodating as both my boyfriend and I don’t eat meat or dairy and that was never an issue. The work is interesting, generally the day to day is quite chilled so if there is anything you specifically want to do or learn about on the farm just ask Donald as he is always happy to show you or teach you about anything. I got so much more from this experience than I ever expected, it is definitely an experience I would recommend without hesitation.
