From the walk through the farmers market, where we met local farmers, bakers and cheese makers who taught us about their products and farms, to the actual cooking of an amazing meal, better than many resteraunt meals, I could not recommend this experience more! They created this class even though we were only three people, and Chef Francis had an easy way to teach us how to make a delicious, nutrious, and totally fun meal. Large kitchen, very close to the town of Napa. Simply Great!

The Culinary Institute of America at Greystone

The health, safety, and well-being of our students, faculty, and staff are our top priority. As such, our campus restaurants and public programs will remain closed for the time being and outside visitors are not permitted on campus. The Culinary Institute of America is one of the world’s most unique and enriching schools for food and wine education. Our academic programs include Associate, Master's degrees and Certificate programs as well as custom programs for leaders and professionals in the food industry. Built in the late 19th century and listed on the National Register of Historic Places, our impressive Greystone facility in St. Helena was once home to the Christian Brothers Winery. After reopening, we will offer dining in the Gatehouse Restaurant; espresso and pastry from The Bakery Cafe by illy, shopping for everything culinary in the Spice Islands Marketplace, and historic public tours, including the historic Barrel Room, and the amazing collection of 1000+ corkscrews.

We visited the CIA while in Napa for a romantic weekend, and were blown away by the spectacular and very reasonably priced food at the bakery cafe. Prepared and attended by students who were informed and friendly, we enjoyed a lovely, light late afternoon lunch. Make sure you take the time to fully explore the grounds, which include a display of corkscrews, art by the students and teaching kitchens.

While there are some mixed reviews here, we had a great experience at the CIA at Copia, located right near the Oxbow Market. We went to the restaurant with slightly different expectations, having visited the Rhinebeck location of the CIA many times. Unlike Rhinebeck (and apparently the CIA location in St. Helena) the hostess described this restaurant as "professionally run" rather than student run. This was a bit disappointing since we really like the experience of interacting with the students (and the fixed price menu). The servers and chefs here are young, perhaps CIA grads? We started with a shared appetizer, the Delicata squash, served with a spicy yogurt sauce (it could have used more salt). It was good, the sauce perhaps a bit spicy for my palate. My main was the rockfish, made with a curry sauce and cauliflower on the side. It was done perfectly and tasty. My husband declared his pork chop the best he's had in recent memory. Service was friendly and attentive. Many wine offerings, although the local wines are pricey at about $16 a glass we opted for that. By the end of the meal we were too full for dessert, although it looked like some nice options. Our bill, minus tip, was $116 of two mains and a appetizer, so it's fine dining. The atmosphere is modern. The restaurant was less crowded on a Saturday than expected, but perhaps it's the time of year. While I'd definitely recommend the CIA at Copia, just be sure you know it's not student run. High quality and relaxing, but there is something nice about interacting with the students that you may miss here.
