When I lived in the Netherlands 30 years ago I remember biking out in the countryside along the beautiful polders on the outskirts of Alkmaar. We passed the 3 windmills and finally came to a windmill still in operation that grinds grain to make flour. I remember my young children enjoying climbing the ladder to see how the windmill worked and how friendly the people were there. We purchased flour and made amazing fresh bread. Now 30 years later, I returned to the Netherlands for a visit and I wanted to see if they were still in operation. Sure enough, we found the windmill. It has been newly restored and is in operation making the amazing fresh flour from grain grown right on the polder (fields) reclaimed from the waters. The people there were extra friendly, helpful and showed us every detail of the newly restored windmill. It is beautiful. Next year they celebrate 350 years! We purchased some freshly ground spelt flour and today I made some bread which we just can't wait to try! This is a worthwhile trip for anyone visiting North Holland.
