Fromagerie Haut Val d'Ayas

Fromagerie Haut val d'Ayas Cheese Dairy is today's blend of local traditions, handed down over the centuries by a community closely bound to its land. Selected alpine cattle are reared on controlled pasturelands for their rich, priced milk. Set up in 2002 with the intention of optimizing the production and processing of local milk, the cheese dairy adopted the traditional, yet practical, cooperative system once widely used throughout the region. Today, more than 2,5 million liters milk per year are supplied by approximately 50 local farms forming part of Fromagerie Haut Val d'Ayas Cooperative. Our secret lies not so much in the recipe but in the ingredients that go into our cheeses, such us top quality milk, genuine passion and expertise involved in processing this raw material. All our milk comes from native Valdostan breeds raised in Val d'Ayas following traditional non-intensive farming methods that respect both the mountain environment and the welfare of livestock.
