Les Caves Bailly Lapierre

The Caves Bailly Lapierre are located in the heart of the Auxerrois, above the town of St Bris le Vineux. Created in 1972, the Caves Bailly Lapierre gather together 71 winegrowers who sell their cremants, the Caves' specialty, and wines on site. Dug deep in the stone, the wine caves are used as a cradle in which to create cremants. Guided tours of the caves are organized every day from 2:30 to 5:30 pm, in july and august, and from 3:30 to 4:30 pm on weekends and bank holidays.

The cave is huge, several millions of bottles are stocked. When I arrived I parked my car directly in the cave, we took the tour for 1h including a double champagne flute of cremant tasting. Don’t forget your sweat shirt, the temperature is approximately 12 degrees.
