Loved the hour long learning and tasting of coco beans. The coco nibb cookies at the counter are delicious and we got a couple bags of coco nibbs to go so we could bake and make smoothies at home!

For our first morning in Cayo, following a long travel day, we wanted to do something fun and informative, but not too physically demanding (that would come later). A demonstration/lesson on traditional Mayan cooking at Eden Valley Mayan Kitchen, was the perfect answer. We met Yesenia and her daughter during the mid-morning and were givien a tour of her garden which included explanations of the medicinal and historical uses of many plants, including the "Fishtail" plant. The leaves of which are used to produce the green dye with which the US Treasury Department prints US paper currency. Following the educational garden tour, we started preparations for lunch using traditonal Mayan cooking methods. Among other things we ground corn and cacao beans to make tortillas and a deliciously bitter chcolate drink. All the while Yesenia was giving a a history lesson on Mayan culture and cooking. We leaned of the importance of chcolate in the Ancient Mayan culture. We prpared tamales, wrapping them in plantain leaves that we cut ourselves. And also made a tasty and hearty soup/stew using locally rown vegetables, including the coco yam, which is sort of like our white potato but tastes better. Our lunch of tortillas, tamales, and soup, was filling and more than we could possibly eat in one sitting, so we took some back with us to the hotel. Yesenia is a wonderful host with a warm and welcoming personality and wonderful sense of humor. She also has a wealth of knowledge of traditional Mayan culture which she generously shares during the class. This was a very positive, educational, and fun experience that I would recommend to anyone visiting the San Ignacio/Santa Elena area. And don't forget to meet Chuck the Duck!
