The cuisine is surprising: it's the legacy of the late chef Toshiro who had the talent of creating a totally new style of Japanese culinary.Try the sushi "acebichado", a real goddess of contemporary cuisine. Great restaurant. Make sure to make reservations. The food is an excellent example of the fusion of Peruvian and Japanese tastes. Highly recommended. Pricey for South American standards. About USD50 to USD60 per person, plus wine and desert.

Nikkei (the fusion of Japanese and Peruvian) cuisine at its best.The menu accompanies great quality sashimi with sushi, makis, and main courses that go way beyond the usual sauteed preparations, bringing in ingredients from the Sierra and Amazon regions of Peru with creativity, technique and excellent taste. Desserts are very much worth saving some appetite to have them.The list of cocktails and wines is not very large but represent a good selection and also include original combinations in the case of cocktails (both with or without alcohol).My mouth waters as I write this comment... Staff members are knowledgeable on the menu and are able and happy to help to make your choices. The decoration is pleasant, tables are well distributed, comfortable chairs... Prices are reasonable for the quality of the food, service and environment.

Sorry to say I was negatively surprized, very disappointed with several items at the restaurant. Nearly all fish and cebiche restaurants in Peru put a small dish of 'cancha' on the table when clients are looking at the menu. The waiters refill the dish as the contents disappear. ''Cancha'' is an Andean snack made from what are usually very dry, toasted and salted corn seeds. They should be very tender, flakey and crunchy, nearly disappearing in the mouth when chewed. What we were served was hard, damp, and left chunks in the mouth. Really difficult to imagine a restaurant with such poor quality 'cancha' that is usually tender delight and a must for tourists to try. Needless to say, there was no need to refill our dish. A great Peruvian staple at cebiche restaurants is sliced cold octopus covered in a purple olive cream sauce....again a disaster. Octopus can be very hard if it is old or over-cooked. The best octopus is tender and cut very thin from the smaller parts of the tentacles. Nikko's version was hard, cut too thick, nearly unchewable. ''Chicha morada'' is a very typical drink made with purple corn boiled with several types of fruit including pinapple and spiced with cinnamon bark and cloves. It is one of the most popular of all Peruvian drinks and people buy it in liter pitchers to accompany the meal. Ours had the typical good flavors but it was so overly sweet that it was very unpleasant. Was there even one redeeming feature you will ask? Well yes, had I been better informed I would have ordered a dish of quinua prepared with soy sauce and the ingredients commonly found in Chinese rice. On the menu it is called ''chaufa de quinua.'' Yes, everyone tried a bit from one order and enjoyed it. ''Quinua'' for those who are not familiar with the name, is an Andean grain, very high in vegetable protein and very tasty depending on its preparation.

I normally don't like restaurants that are too trendy, and prefer low key establishments that are more about substance than decoration. But in this case, they have both fronts covered. Food and drinks all excellent--as much as I love traditional sushi, these inventive twists they put on their dishes were all exploding with flavor and texture, each bite more exciting than the last. We were big group of 10 and they managed all the orders very well, with three separate checks and all the different drink orders, so big props on the wait staff for handling it all very professionally. We got to be in a sort of private dining room which was also quite nice. This was the first meal we had over a 2-week multi-city trip--we couldn't have started off in a better way!
